easy summer recipe

It’s July. In the northern hemisphere that usually means it’s pretty hot. Here’s a quick and easy recipe that doesn’t require any cooking:

  • 2 16-ounce cans of black beans, drained and rinsed
  • 2 medium red bell peppers, cut into thin strips
  • one half cup of low-fat vinaigrette
  • one half cup of chopped fresh parsley
  • one half cup of crumbled feta cheese

Directions: toss well, serve. You might combine this with a grain dish like couscous or with a nice, hearty bread.

    One knife
    Use the knife to cut a plug out of the top of the watermelon. Pour in bottle of vodka. Replace plug and let sit for several hours. Slice watermelon and serve and enjoy the giddy refreshment. Your friends will enjoy watching you fall down.

And because I did want any readers in the southern hemisphere to think I was ignoring them, I did acknowledge that it’s only hot on this side of the planet.     Peel and cube several sweet potatoes, and roast them in the oven with some olive oil till tender. You can speed this up by microwaving them for 5-8 minutes first.
    Then dress them:
    2 Tbs mayonnaise
    Juice and grated peel of 2 lemons
    1/2 tsp. of brown sugar
    salt to taste
    Chopped cilantro or parsley
    Thai red curry paste to taste, or that hot delicious liquid that lives in the can with the chipotles in adobo
    Whisk it all together, pour over the sweet potatoes, and chill.
